Purposefully fermenting at a low temperature to make "ginjo-shu," is a challenging process, but it is also what makes sake brewing so rewarding. With the basis of knowledge and experience from the ginzukuri process, we strive to improve the quality of all sake produced at Gochoda Brewery.
